Banana Bread
Preparation Time: 15 minutes
Microwave Time: 10 to 15 minutes
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup shortening
1/2 cup packed brown sugar
2 eggs
2 teaspoons vanilla
2 medium to large very ripe mashed bananas
1/4 cup milk
1/3 cup finely chopped walnuts
Combine flour, baking soda and salt in a mixing bowl. In a separate bowl, cream together shortening and brown sugar, using an electric mixer. Slowly beat in the eggs, vanilla and banana. Gradually add flour mixture and finally the milk, continuing to mix the entire time. Finally, stir in the walnuts until mixed in evenly. Pour the batter into greased, microwave-safe glass bread loaf baking dish.
Microwave on high for about 10 to 15 minutes until bread starts to pull away from side of loaf pan, and a butter knife comes out clean from the center. When fully cooked, immediately remove bread from pan by running a knife along all of the edges, and tipping over on a cooling rack. Serve with butter, honey, jam or maple syrup!
