Breadless Chicken Cordon Bleu
Preparation time: 5 minutes
Microwave time: 6 to 13 minutes
4 boned skinless chicken breast halves
4 slices process Swiss cheese
2-3 tablespoons Dijon mustard
4 thin slices fully cooked ham or Canadian Style Bacon
Paprika
Cherry tomatoes (optional)
Parsley sprigs (optional)
To cook the chicken, place in a microwave safe baking dish, and cover loosely with microwave safe plastic wrap. Cook on high heat for 5-12 minutes, depending on the size of the chicken breasts, until meat is no longer pink inside, and the juices run clear. Drain the juices off the meat.
Half the cheese slices so that you have 8 equal slices. Brush the cooked chicken with the mustard and then top with one of the halves of cheese. Place a slice of ham and top, followed by a second half of cheese. Cook on high heat, uncovered for 30 seconds to a minute, until the cheese is melted. Transfer to plates, sprinkle with paprika and if desired, garnish with the swigs of parsley and a cherry tomato.
