Broccoli Fettuccine Alfredo
Preparation Time: 5-10 minutes
Microwave Time: 16-22 minutes
1 cup fettuccine noodles (or 2 serving sizes according to pasta package)
2 cups water (or 2 serving sizes, according to pasta package)
1 Tablespoon olive oil
1 ½ tablespoons butter
1 tablespoon all purpose flour
¾ milk
1 tablespoon heavy cream
½ cup freshly grated parmesan cheese
3 ounces cream cheese, softened
1 teaspoon freshly ground black pepper
1 cup frozen broccoli
½ cup water
Place pasta and 2 cups water in a microwave safe dish. Microwave on high for 10 to 15 minutes, stirring every 5 minutes, until pasta is cooked all the way through. Drain excess water, coat all noodles with olive oil to prevent from sticking and set aside.
In another microwave-safe dish, melt the butter (about 30 seconds in the microwave). Slowly whisk the flour into the butter, until well-mixed. Slowly whisk in the milk, heavy cream, parmesan cheese, and cream cheese – one ingredient at a time, until all are added, and are well mixed. Stir in pepper. Microwave on high for about 3 minutes until hot and bubbly. Set aside.
Finally, add the broccoli and ½ cup water into a third microwave-safe dish. Microwave on high for 3 to 5 minutes, until broccoli is warmed through. Toss the cooked noodles and broccoli into the sauce. Serve and enjoy!
