Chicken Pepper Pizza
Preparation Time: 10 minutes
Microwave Time: 8 to 12 minutes
1 large pre-baked pizza crust (i.e. Boboli Pizza Crust)
2 cooked chicken breasts, diced
1 large red bell pepper, cut into thin slices
1 large green bell pepper, cut into thin slices
1 cup shredded mozzarella cheese
5 tablespoons garlic infused or Italian seasoned olive oil
Prepare the chicken breasts in the microwave as instructed, dice and set aside. Place the red and green pepper slices in a microwave-safe dish with one tablespoon of the olive oil. Microwave on high for 3 to 5 minutes, until peppers are tender.
Brush the pizza crust with the olive oil until the entire surface is covered. Sprinkle the mozzarella cheese over top the crust. Then top the pizza with the cooked peppers and diced chicken. Place the entire pizza on a microwave-safe plate, and microwave on high for 1 to 3 minutes, until cheese is hot and bubbly.
