Cinnamon Peanut Brittle

Preparation Time: 20 minutes
Microwaving Time: 7 ½ to 8 minutes

1 cup sugar
½ cup light corn syrup
2 1/4 cups salted peanuts
2 teaspoons butter
½ teaspoon ground cinnamon
1 teaspoon baking soda
2 teaspoon vanilla extract

Combine the sugar and corn syrup in a microwave safe bowl and heat for 4 minutes on high heat, leaving uncovered. Stir the mixture, return to microwave, and heat for an additional 3 minutes. Mix in the butter, peanuts and cinnamon, return to microwave, and continue to heat for about 30 to 60 seconds until the mixture obtains a light amber coloration. Caution: The mixture will be extremely hot.

While mixture is still hot, quickly stir in the vanilla and baking soda until a light and foamy look appears. Immediately after mixing, spread into a greased baking sheet and spread out evenly using a spatula. Place the baking sheet into the refrigerator for about 20 minutes or until the brittle becomes firm. When firm, take the brittle out and break into pieces before enjoying.
