Herbed Potato Wedges
Preparation Time: 5 minutes
Microwave Time: 9-11 minutes
2 tbsp better or margarine
3 medium potatoes, approx. 1 lb
¼ tsp dried and crushed basil, tarragon or oregano
¼ tsp onion salt or garlic salt
1/8 tsp pepper
Scrub and cut the potatoes each into eight wedges and set aside. Using a 8x8x2 microwave safe baking dish, melt the margarine or butter on high for about 45 to 60 seconds or until all the butter is melted. Once melted stir in the spices. Add the potato wedges and cover in the mixture. Cover the dish with a vented microwave safe wrap. Place the dish back into the microwave, cooking for another 8 to 10 minutes or until the potatoes are tender. During the duration of the cooking, stir the potatoes twice.
