Kid-Friendly, Babysitter Approved Mini-Pizzas
Preparation Time: 10 minutes
Microwave Time: 1 to 4 minutes
4 hamburger buns
1 jar tomato/pizza sauce
1 cup fresh spinach
1 package pepperoni
2 hotdogs, cut into slices
2 cups mozzarella cheese
Open all the hamburger buns and place open-face up on a large, microwave-safe platter.
In a large food processor, combine spinach and tomato sauce (this is a creative way to get your kids to eat their veggies when the babysitter is with them). If you don’t have a food processor, you can also finely chop the spinach by hand and stir directly into the sauce.
Spread 1 to 2 tablespoons of sauce of each hamburger bun. Top each bun with a sprinkling of cheese, pepperoni slices, and hotdog slices. Microwave on high for 1 to 4 minutes, depending on the number of buns, until cheese is melted and sauce is hot and bubbly. Serve each mini-pizza to the kids!
