Marinara Sauce
Preparation Time: 5 to 10 minutes
Microwave Time: 7 to 10 minutes
1 clove garlic, peeled and minced
1 small yellow onion, finely chopped
1/2 cup black olives, chopped
2 tablespoons olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
2 cans of diced tomatoes (and all juices)
Peel and mince the garlic, chop the onion and black olives. Combine the garlic, onion and olive oil in a microwave-safe mixing bowl. Microwave on high for 2 to 3 minutes, stirring after 1 1/2 minutes, until onions are softened. Add olives, crushed red pepper, oregano, basil, salt and pepper to the onion/garlic mixture. Stir well, and microwave on high for 1 minute. Finally, add the two cans of diced tomatoes, ensuring that you pour in all of the extra juice from the can as well. Stir well, and microwave on high for 4 to 6 minutes, stirring after 3 minutes, until sauce is hot and bubbly.
Serve over cooked pasta, bake in lasagna, use as a pizza sauce, or a dip for breadsticks!
