Mashed Cauliflower
Preparation Time: 5 to 10 minutes
Microwave Time: 5 to 7 minutes
1/2 head cauliflower
1 cup chicken broth
1/4 cup cream cheese
1 tablespoon butter
1/4 cup freshly grated parmesan cheese
1 teaspo0n salt
2 teaspoons freshly grated black pepper
2 tablespoons dried or fresh chopped chives
Wash the cauliflower, and cut into chunks (can be bigger than bite size). Add the cauliflower and chicken broth into a microwave safe bowl. Microwave on high for 3 to 5 minutes, until cauliflower is soft and chicken broth is hot.
Add the broth and the cauliflower to a big food processor. Add the cream cheese, butter, salt and pepper and parmesan cheese to the food processor as well. Pulse until cauliflower is smooth. If necessary, replace the mashed cauliflower in a microwave-safe bowl, and return to the microwave for another 2 minutes to heat thoroughly. Top with chives before serving.
