Mom’s Old-Fashioned Meatloaf
Preparation Time: 7 minutes
Microwaving Time: 10-12 minutes
1 lb lean ground beef or ground turkey
1/2 cup crushed cracker crumbs
2 large eggs
3/4 cupe ketchup
1/4 cup white or yellow onion, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 tablespoon worcestershire sauce
Mix all of the ingredients together in a large mixing bowl. Form into a round “log-shaped” loaf and place in a microwave-safe baking dish. Microwave on high for 10-12 minutes (roatating by hand every 3-4 minutes if microwave doesn’t have a turn table). Let stand for 4 minutes. Slice and serve with loaded baked potatoes and a side salad for a delicious dinner.
