Mushroom Couscous

Microwave Time: 5 minutes
2 cup low sodium chicken broth
1/2 cup condensed cream of mushroom soup
1/2 cup yellow onion, finely chopped
1 cup unseasoned couscous
1/2 cup fresh flat leaf parsley
Place the chicken broth, mushroom soup, and the chopped onion in a microwave-safe mixing bowl. Mix all ingredients together well. Microwave on high for 2 to 4 minutes, until the mixture comes to a boil. Immediately mix the unseasoned couscous into the mixture. Cover, and set aside for 5 minutes.
Meanwhile, wash and chop the parsley. After 5 minutes is up, mix the fresh parsley into the couscous and enjoy! You can also add in any other fresh veggies you’d like to this dish.
