Personal-Size Pita Pizzas
Preparation Time: 15 minutes
Microwave Time: 2 minutes per pizza
4 round whole wheat pita bread pieces (8″-10″)
1/2 large yellow onion (or 1 small yellow onion)
1 green pepper
1/2 cup black olives, chopped
1/2 cup green olives, chopped
1 package pepperoni
1 jar of your favorite tomato sauce
4 cups shredded mozzarella cheese
Chop all vegetables and shred the mozzarella cheese if necessary, set aside. Place each pita on a microwave safe plate. Spread tomato sauce on top of each pita (about 1/4 – 1/2 cup per pizza). Add vegetables and pepperoni evenly to all pizzas. Top each pizza with 1/2 to 3/4 cup shredded mozzarella cheese. Microwave each pizza individually, on high, until cheese is melted and hot. Cut each pita pizza into slices and enjoy!
