Quick Chicken Cordon Bleu

Chicken
4 boneless skinless chicken breast halves
2 teaspoons Dijon mustard
½ teaspoon paprika
4 thin slices deli ham
1 cup soft bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon pepper
3 to 4 tablespoons mayonnaise
Sauce
1 tablespoon butter
1 tablespoon all- purpose flour
1 cup milk
¼ teaspoon salt
½ cup Swiss cheese, shredded or crumbled
2 tablespoons white wine
Pound the chicken halves down to a ½ inch thickness. Spread mustard on one side of the chicken and sprinkle paprika over the mustard. Cover this with a ham slice and secure with a toothpick. In a bowl, combine Parmesan cheese, bread crumbs, and pepper. Brush the chicken/ham with mayonnaise and roll into mixture. Place the chicken in a microwave safe dish and cover with microwave safe plastic wrap. Heat on high for 7-12 minutes, rotating if necessary, until chicken is fully cooked and juices run clear. Set aside and keep warm.
In a separate microwave safe dish, heat the butter on for 20 seconds until melted and stir in flour until smooth. Gradually add milk and salt. Cook for 2 to 3 minutes or until thick. Stir in cheese until smooth. Finally stir in wine. Discard toothpicks from chicken and cover in the sauce.
