Microwave Time: 8 to 9 1/2 minutes

2 boneless, skinless chicken breasts
1/4 cup flour
1 egg
1/4 cup Italian bread crumbs
2 tablespoons Parmesan cheese
4 strips of bacon
2 sandwich rolls
2 tablespoons ranch dressing
2 tomato slices
small handful shredded lettuce

Pound each chicken breast to about 1/4 to 1/2-inch thickness all the way across. Place the flour and bread crumbs in separate shallow dishes that will allow you to easily dip the chicken. Crack the egg in a third shallow dish, and lightly beat. Add a dash of salt and pepper to the eggs, and add the Parmesan cheese to the bread crumbs. One at a time, dip each chicken breast into flour (make sure you get both sides), then in the eggs, then into the bread crumbs. When both chicken breasts are fully coated in bread crumbs, place in a greased microwave-safe baking dish. Microwave on high for 5 to 5 1/2 minutes until bread crumbs are fully baked onto the chicken, and both chicken breasts are fully cooked. Set aside.

Place a layer of paper towel in a microwave safe dish or on a microwave safe plate. Lay the strips of bacon over the paper towel. Microwave on high for 2 1/2 to 4 minutes, until bacon is fully cooked and crisp. Remove from microwave and place on a new sheet of paper towel to drain away excess grease. Set aside.

Open each sandwich bun. Put 1 slice of cheddar cheese on each bun. Place buns in microwave for 30 seconds to 1 minute until cheese is melted. Remove from microwave, and add chicken breast and 2 strips of bacon to each bun. Then top with 1 tablespoon of ranch dressing on each sandwich, and lettuce and tomato as desired.

Microwave Time: 7 to 10 minutes

2 English Muffins, cut in half
8 strips cooked, crispy bacon
2 fried eggs
1 tablespoon tobasco sauce
2 slices pepper jack cheese
1/4 cup fresh salsa

Place a layer of paper towel on a microwave safe plate. Lay the strips of bacon over the paper towel. Microwave on high for 4 to 5 1/2 minutes, until bacon is fully cooked and crisp. Remove from microwave and place on a new sheet of paper towel to drain away excess grease. Set aside and let cool.

Preheat a 2- to 2 1/2-quart or 10-inch square microwave browning dish on HIGH (100%) for 2 minutes. Using oven mitts, carefully remove dish to a heatproof surface. Add 1 teaspoon butter or margarine per egg to hot dish; tilt dish to coat bottom with butter. Carefully break 2 eggs into dish.

With a fork, prick egg yolks straight down through membrane. Cover with a glass lid. Microwave on HIGH (100%) for 45 to 90 seconds until eggs are fully cooked. Remove from oven; let stand, covered, for 2 to 3 minutes before serving.

Open the english muffins. On each muffin, place 1 egg, 4 strips of bacon, 1 slice of cheese, half of the tobasco sauce and half of the salsa. Return to microwave for about 20 seconds, to melt cheese slightly and warm muffins.

Preparation time: 5 to 10 minutes
Microwaving time: 24 to 27 minutes

Serve polenta or boiled potatoes alongside these saucy little birds.

2 small Rock Cornish game hens (about 1 1/4 lbs. each), cut into halves
Ground white pepper
2 slices pancetta or bacon (about 2 oz. , total), coarsely chopped
1 clove garlic, minced or pressed
1/2 teaspoon dry marjoram leaves
1 tablespoon tomato paste
1 1/4 cups Chianti or other dry red wine
2 tablespoons butter or margarine, melted 1 tablespoon all-purpose flour
Chopped parsley

Rinse hen halves, pat dry, and sprinkle lightly with white pepper. Place pancetta in a 2- to 2 1/2-quart or 10-inch square microwave browning dish. Cover with a paper towel and microwave on HIGH (100%) for 2 minutes or until pancetta is lightly browned, stirring after 1 minute. Lift pancetta from dish and set aside.

Preheat browning dish on HIGH (100%) for 2 minutes. Brown hens as directed in recipe above; turn skin side up. Blend garlic, marjoram, tomato paste, and wine into drippings; spoon over hens. Cover; microwave on HIGH (100%) for 10 minutes, giving dish a half-turn after 5 minutes.
Turn hens to bring uncooked portions to outside of dish; baste with sauce. Cover and microwave on HIGH (100%) for 8 to 10 minutes or until meat near thighbone is no longer pink (cut to test), giving dish a half-turn after 4 minutes. Place hens on a warm platter and keep warm.

In a small bowl, blend butter and flour. Slowly stir in 1/4 cup of the wine sauce; then stir back into remaining sauce in dish. Microwave, uncovered, on HIGH (100%) for 2 to 3 minutes or until sauce boils, stirring every 30 seconds. Pour sauce over hens; top with pancetta and parsley. Makes 4 servings.
